Meat Recipes - Quick-Fried Spinach With Shredded Pork

Ingredients

  • 3 tbsp vegetable oil

  • 8oz (225g) pork tenderloin, cut across the grain into thin strips

  • 2 tbsp soy sauce

  • 1 tbsp rice wine or dry sherry

  • 1 tsp sugar

  • 1/2 tsp black pepper

  • 3 tbsp vegetable fat

  • 2 cups (0.5kg) chopped spinach

  • 1 tsp salt


Method:

  1. Heat the oil in a large saucepan. When it is hot, add the pork strips and stir-fry for 2 minutes. Add the soy sauce, wine or sherry, sugar and pepper and stir-fry for a further 2 minutes. Transfer the pork to a plate and set aside.

  2. Add 25g (2 tablespoons) of the vegetable fat to the pan and melt it over moderate heat. Add the spinach and salt and stir-fry for 3 minutes. Add the remaining fat to the pan and stir-fry for a further 30 seconds.

  3. Using a slotted spoon, transfer the spinach to a warmed serving dish. Increase the heat to moderately high and return the pork strips to the pan. Stir-fry for 1 minute, to reheat them thoroughly.

  4. Remove from the heat and pour the pork strips and juices over the spinach. Serve at once.
