Beef With Star Anise
Ingredients
1/3 cup (75ml) vegetable oil
1 x 3-4lb leg or shin of beef,
cubed
3 pieces star anise
2/3 beef bouillon (stock
) cube, crumbled
7 tbsp soy sauce
1 inch piece of fresh green
ginger, peeled and finely chopped
2 tsp sugar
2/3 cup (150ml) red wine
Method:
Preheat the oven to cool 150C (Gas Mark 2,300F).
Heat
the oil in a flameproof casserole. When it is hot,
add the beef cubes and fry until they are evenly
browned. Remove from the heat and pour off all the
excess oil.
Stir
in the star anise, water, stock cube and 4
tablespoons or soy sauce. Return the casserole to
the heat and bring to the boil, stirring constantly.
Transfer to the oven and stir in the remaining
ingredients. Return to the oven and cook for a
further 2 hours, turning the meat every 30 minutes.
