Meat Recipes - Red-Cooked Pork In Soy Sauce

Ingredients

  • 1 x 4lb (1 x 2kg) belly or bacon of pork

  • 1/3 cup (75ml) vegetable oil

  • 7 tbsp soy sauce

  • 1 tbsp sugar

  • 2/3 cup (150ml) chicken or beef stock

  • 2/3 cup (150ml) red wine


Method:

  1. Preheat the oven to warm 170C (Gas Mark 3,325F).

  2. Cut the pork through the sin into 12 pieces. Heat the oil in a flameproof casserole. When it is hot, add the pork slices and fry until they are evenly browned. Remove from the hat and pour off excess oil. Add 4 tablespoons of the soy sauce, half the sugar and 75ml (1/3 cup) each of the stock and wine. Turn the meat in this sauce several times. Return to the heat and bring to the boil.

  3. Transfer the casserole to the oven and roast for 1 hour, turning the meat once.

  4. Remove from the oven and add the remaining soy sauce, sugar, stock and wine. Turn the meat over several times. Return the casserole to the oven and reduce the oven temperature to cool 150C (Gas Mark 2,300F). Roast for a further 1 hour, turning the meat once.

  5. Remove from the oven and serve at once.
