Meat Recipes - Shredded Pork Stir-Fried With Spring Greens

Ingredients

  • 12 oz (350g) lean pork, cut into thin strips

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 2 tsp cornstarch

  • 3 tbsp vegetable oil

  • 2 1/2 cups (0.5kg) shredded spring greens or cabbage

  • 1 tbsp vegetable fat

  • 1/4 cup (50ml) beef stock

  • 2 tbsp soy sauce

  • 1 tsp sugar

  • 2 tbsp dry sherry


Method:

  1. Put the pork strips on a plate and sprinkle them with the salt, pepper and cornstarch, rubbing them into the flesh with your fingers.

  2. Heat the oil in a large frying-pan. When it is hot, add the pork and fry for 3 minutes, stirring constantly. Push the pork strips to the side of the pan and add the spring greens or cabbage with the vegetable fat. Stir and mix the spring greens or cabbage with the remainder of the oil and the vegetable fat.

  3. Reduce the heat to moderate and stir in the stock, soy sauce and sugar. Fry the spring greens or cabbage for 3 minutes, turning constantly.

  4. Stir the pork strips into the vegetables. Pour over the wine or sherry and fry for a further 1 minute, stirring constantly. Remove from the heat and transfer to a warmed serving dish. Serve at once.
