Meat Recipes - Steak With Pepper

Ingredients

  • 1lb (0.5kg) rump steak, cut 1 inch thick

  • 4 tbsp peanut oil

  • 2 garlic cloves, crushed

  • salt and pepper

  • 4 tbsp soy sauce

  • 2 tsp sugar

  • 1 cup (225g) bean sprouts

  • 2 tomatoes, blanched, peeled and quartered

  • 2 green peppers, pith and seeds remove, and coarsely diced

  • 1/2 tbsp cornstarch mixed to a paste with 2 tbsp cold water

  • 4 spring onions, sliced


Method:

  1. Cut the beef diagonally into short, thin strips.

  2. Heat the oil in the heavy frying-pan. When it is hot, mix in the garlic and salt and pepper to taste. Add the beef and stir-fry for 3 to 4 minutes or until it is golden brown.

  3. Increase the heat to high. Stir in the soy sauce and sugar, cover and cook for 5 minutes.

  4. Uncover and stir in the bean sprouts, tomatoes and peppers. Re-cover and cook for 5 minutes.

  5. Stir in the cornstarch mixture until the mixture thickens and becomes translucent.

  6. Transfer to a warmed serving dish and sprinkle over the spring onions.
