2 green peppers, pith and seeds
remove, and coarsely diced
1/2 tbsp cornstarch mixed to a
paste with 2 tbsp cold water
4 spring onions, sliced
Method:
Cut
the beef diagonally into short, thin strips.
Heat
the oil in the heavy frying-pan. When it is hot, mix
in the garlic and salt and pepper to taste. Add the
beef and stir-fry for 3 to 4 minutes or until it is
golden brown.
Increase the heat to high. Stir in the soy sauce and
sugar, cover and cook for 5 minutes.
Uncover and stir in the bean sprouts, tomatoes and
peppers. Re-cover and cook for 5 minutes.
Stir
in the cornstarch mixture until the mixture thickens
and becomes translucent.
Transfer to a warmed serving dish and sprinkle over
the spring onions.
