Beef With Broccoli
Ingredients
1lb (0.5kg) fillet of beef,
thinly sliced across the grain into 3 inch x 2 inch
pieces
3 tbsp soy sauce
1 tbsp rice wine or dry sherry
1 inch piece of fresh green
ginger, peeled and chopped
1/4 cup (50ml0 vegetable oil
1lb (0.5kg) broccoli, broken
into flowerets
1/3 cup (75ml) beef stock
1 tbsp vegetable fat
2 tsp cornstarch, mixed to a
paste with 4 tbsp water
Method:
Put
the beef strips into a shallow bowl. Combine the soy
sauce, wine or sherry, ginger and 1 tablespoon of
oil together, then pour over the strips, basting to
coat them thoroughly. set aside to marinate at room
temperature for 10 minutes, stirring
occasionally. Meanwhile, cut the broccoli into
bite-sized pieces.
Heat
the remaining oil in a large frying-pan. When it is
hot, add the beef mixture and stir-fry for 1 1/2
minutes. Using a slotted spoon, transfer the beef
strips to a plate. Add the beef stock to the pan and
bring to the boil, stirring constantly.
Add
in the broccoli and fry for 1 minute, stirring
constantly. Reduce the heat to very low, cover and
simmer the mixture for 4 minutes. Using the slotted
spoon, transfer the broccoli to a warmed serving
dish. Keep hot while you finish off the meat.
Add
the vegetable fat to the pan and melt it. Return the
beef strips to the pan and stir-fry for 30 seconds.
Add the cornstarch and stir-fry for 1 minute, or
until the sauce becomes translucent. Remove from the
heat.
Using the slotted spoon, transfer the beef strips
over the broccoli, then pour over the sauce. Serve
at once.
