Beef With Mixed Vegetables And Peanuts
Ingredients
1 lb (0.5kg) rump steak, thinly
sliced across the grain, then cut into strips
salt and pepper to taste
1 tsp ground ginger
1 tbsp cornstarch
1/4 cup (50ml) peanut oil
2 inch piece of fresh green
ginger, peeled and chopped
3/4 cup (175g) bean sprouts
2 spring onions, chopped
3 tbsp unsalted peanuts
2 tbsp soy sauce
1 tsp wine vinegar
1 tsp brown sugar
Method:
Rub
the beef strips with the salt, pepper, ginger and
cornstarch.
Heat
the oil in a large, deep frying-pan. When it is hot,
add the root (green) ginger and fry for 1 minute,
stirring constantly.
Add
the beef and stir-fry for 2 minutes. Stir in the
vegetables and peanuts and fry for 2 minutes,
stirring constantly. Add the remaining ingredients
and stir-fry for a further 1 1/2 minutes.
Transfer the mixture to a warmed serving dish and
serve at once.
