Meat Recipes - Stir-Fried Beef With Mixed Vegetables And Peanuts

Ingredients

  • 1 lb (0.5kg) rump steak, thinly sliced across the grain, then cut into strips

  • salt and pepper to taste

  • 1 tsp ground ginger

  • 1 tbsp cornstarch

  • 1/4 cup (50ml) peanut oil

  • 2 inch piece of fresh green ginger, peeled and chopped

  • 3/4 cup (175g) bean sprouts

  • 2 spring onions, chopped

  • 3 tbsp unsalted peanuts

  • 2 tbsp soy sauce

  • 1 tsp wine vinegar

  • 1 tsp brown sugar


Method:

  1. Rub the beef strips with the salt, pepper, ginger and cornstarch.

  2. Heat the oil in a large, deep frying-pan. When it is hot, add the root (green) ginger and fry for 1 minute, stirring constantly.

  3. Add the beef and stir-fry for 2 minutes. Stir in the vegetables and peanuts and fry for 2 minutes, stirring constantly. Add the remaining ingredients and stir-fry for a further 1 1/2 minutes.

  4. Transfer the mixture to a warmed serving dish and serve at once.
