- Wontons With Almonds And Dates
Ingredients
1 cup (175g) finely chopped
pitted dates
1/3 cup (50g) flaked almonds
2 tsp sesame seeds
grated rind of 1 orange
2 tbsp orange-flower water
8oz (225g) wonton dough (see
wonton dough recipe), thinly rolled and cut into 36
squares, or bough wonton wrappers
vegetable oil for deep-frying
2 tbsp icing sugar
(confectioners') sugar
1 orange, thinly sliced
Method:
Put the dates, almonds, sesame seeds, orange
rind and orange-flower water in a bowl and knead
the mixture until the ingredients are combined.
Lay the wonton wrappers on a flat surface and
put a little filling just below the centre. Wet
the edges of the dough, then fold over one
corner to make a triangle, pinching the edges
together to seal. Pull the corners at the base
of the triangle together and pinch to seal.
Fill a large saucepan one-third full with oil
and heat until it is very hot. Carefully lower
the wontons into the oil, a few a a time, and
fry for 2 minutes, or until they are golden
brown and crisp. Remove from the oil and drain
on kitchen towels.
Arrange the cooked wontons on a warmed serving
dish. Sprinkle over the icing (confectioners')
sugar and garnish with the orange slices. Serve
at once.
