Chinese Eggs and Garnishes Recipes - Bean Sprouts and Bamboo Shoots Omelet Recipe

Ingredients

  • 2 tablespoons bean sprouts

  • 1 tablespoon canned bamboo shoots

  • 1 spring onion

  • 2 eggs

  • 1 dessertspoon peanut oil

  • 1 teaspoon pork dripping

  • pinch each salt and Ve-Tsin (M.S.G.)

  • few shakes white pepper

  • 1/2 teaspoon ginger sherry

  • few drops sesame oil

  • 1 tablespoon hot chicken stock


Method:

  1. Pick over the bean sprouts, discarding any seed pods. Cut the bamboo shoots into thin strips. Cut the spring onion lengthwise, then into short lengths. Chop these finely and keep them apart. Beat the eggs.

  2. Heat together the oil and pork dripping in a frying pan. Add the bean sprouts and bamboo shoots and fry them for 1 minute.

  3. Add the seasonings, sherry, sesame oil and stock and cook for 1 minute, tossing the vegetables about.

  4. Turn the beaten eggs into this mixture and as soon as it will come together form into an omelet.

  5. Turn on to a heated serving dish. Sprinkle with the finely chopped onion and serve at once.
