Chinese Eggs and Garnishes Recipes - Egg Tea Recipe

Ingredients

  • 2-3 tablespoons lotus seeds

  • 2 tablespoons white rock sugar

  • 3/4 pint (U.S. 1 7/8 cups) water

  • 3 eggs


Method:

  1. Drop the lotus seeds into a pan with the sugar and water, bring to the boil and simmer until the seeds are soft. Meanwhile soft-boil and shell the eggs

  2. Remove the lotus seeds and peel off their skins. Return the seeds to the syrup and add the eggs, still remaining whole.

  3. Heat through. Turn all into a deep heated dish and serve at once.

Note: These eggs are eaten with a spoon, a little of them at a time being eaten with a portion of the lotus .

Buy lotus seeds already halved with their central germs removed. Canned lotus seeds can also be bought.
