Chinese Eggs and Garnishes
Recipes - Scallop Omelet Recipe
Ingredients
3 small scallops (white
only)
tiny piece fresh ginger
tiny piece garlic
2 dessertspoons peanut oil
1 teaspoon chopped onion
pinch each salt and Ve-Tsin
(M.S.G.)
2 shakes white pepper
few drops ginger sherry
2 beaten eggs
Method:
Wash the scallops
in running water. Trim and cut them into
not-too-small dice. Place them ready. Crush the
ginger and garlic.
Heat 1
dessertspoon of the oil in a frying-pan. Add the
ginger, garlic and onion and cook for 1 minute. Add
the scallops, seasonings and ginger sherry and cook
for 2 minutes. Turn on to a dish.
Wipe out the
frying-pan. Heat remaining oil in it. Add beaten
eggs and then the scallops and move them about. Form
into a roll. Put on heated dish and serve.
