Ingredients
2 tablespoons dried shrimps
2 eggs
salt and Ve-Tsin
(M.S.G.)
white pepper
2 teaspoons peanut oil
generous pinch sugar
1/2 teaspoon ginger sherry
few drops sesame oil
1 teaspoon finely chopped
spring onion green
Method:
Cover the shrimps
generously with boiling water and leave for 3
minutes. Beat the eggs with a tiny pinch each of
salt, Ve- Tsin and a few shakes pepper.
Drain the shrimps
and rinse them to dislodge any sand. Heat 1 teaspoon
oil in a small frying-pan.
Add the shrimps, another
pinch salt, Ve-Tsin, few shakes pepper, sugar,
sherry and sesame oil and cook for 1 minute.
Heat the
remaining oil in another pan. Add the beaten eggs.
Turn the hot shrimps on top and stir together to
form into an omelet roll.
Turn on to a
heated dish, sprinkle with the chopped onion green
and serve.
