Chinese Eggs and Garnishes Recipes - Scrambled Eggs with Dried Shrimps Recipe

Ingredients

  • 2 tablespoons dried shrimps

  • 2 eggs

  • salt and Ve-Tsin (M.S.G.)

  • white pepper

  • 2 teaspoons peanut oil

  • generous pinch sugar

  • 1/2 teaspoon ginger sherry

  • few drops sesame oil

  • 1 teaspoon finely chopped spring onion green


Method:

  1. Cover the shrimps generously with boiling water and leave for 3 minutes. Beat the eggs with a tiny pinch each of salt, Ve- Tsin and a few shakes pepper.

  2. Drain the shrimps and rinse them to dislodge any sand. Heat 1 teaspoon oil in a small frying-pan.

  3. Add the shrimps, another pinch salt, Ve-Tsin, few shakes pepper, sugar, sherry and sesame oil and cook for 1 minute.

  4. Heat the remaining oil in another pan. Add the beaten eggs. Turn the hot shrimps on top and stir together to form into an omelet roll.

  5. Turn on to a heated dish, sprinkle with the chopped onion green and serve.
