Chinese Eggs and Garnishes Recipes - Steamed Eggs with Springs Onion Recipe

Ingredients

  • 1 teaspoon finely chopped spring onion

  • pinch each salt and Ve-Tsin (M.S.G.)

  • few shakes white pepper

  • few drops ginger sherry

  • few drops sesame oil

  • 2 eggs

  • 2 tablespoons cold water


Method:

  1. Turn the onion into a basin. Add the seasonings, sherry and sesame oil and work them together.

  2. Break the eggs into the basin and add the water. Whip to a froth with a rotary whisk or electric mixer.

  3. Turn into an oiled basin, filling it only two-thirds full. Place in a steamer and steam for 15 minutes. (There is no need to cover the basin). Un-mould and serve.
