Beat
the eggs, soy sauce and seasoning together until the
mixture is light and fluffy.
Melt
the butte in a frying-pan. Add the spring onion and
bean sprouts and fry for 4 to 5 minutes, stirring
occasionally. Pour in the egg mixture, stir with a
fork and leave to set.
Preheat the grill to high. When the bottom of the
foo yung has set, transfer the pan to the grill and
leave for 1 minute or until the top is set and
lightly browned.
