Noodles Recipes - Barbecued Pork Chow Mein

Ingredients

  • 3 tbsp (45ml) vegetable oil

  • 1 tsp (5ml) chopped fresh ginger

  • 1 tsp (5ml) chopped garlic

  • 1/2 lb (225g) Chinese barbecued pork (char sui)

  • 4 Chinese mushrooms, soaked in warm water 20minutes and sliced

  • 2 oz (60g) carrot, sliced and parboiled

  • 1/2 lb (225g) broccoli florets, blanched

  • 2 oz (60g) bamboo shoots, sliced

  • 1/4 lb (110g) bean sprouts, roots removed

  • 1/2 cup (125ml) stock

  • 3 tbsp (45ml) light soy sauce

  • 1 tbsp (15ml) dry sherry

  • 1 tsp (5ml) sugar

  • 1 1/2 tbsp (20ml) cornstarch blended with 3 tbsp (45ml) water

  • 1/2 lb (225g) soft-fried noodles (see recipe provided)   


Method:

  1. Heat oil in a wok. Add ginger, garlic, pork and stir-fry 1-2 minutes. Add vegetables. stock, soy sauce, sherry and sugar. Simmer covered for 2 minutes.

  2. Stir in combined cornstarch and water to thicken. Serve over hot noodles.

Note : Deep-fry chow Mein, noodles, drain well and store in an air-tight container.
