Noodles Recipes - Barbecued Pork Chow

Ingredients

3 tbsp (45ml) vegetable oil

1 tsp (5ml) chopped fresh
ginger

1 tsp (5ml) chopped garlic

1/2 lb (225g) Chinese barbecued
pork (char sui)

4 Chinese mushrooms, soaked in
warm water 20minutes and sliced

2 oz (60g) carrot, sliced and
parboiled

1/2 lb (225g) broccoli florets,
blanched

2 oz (60g) bamboo shoots,
sliced

1/4 lb (110g) bean sprouts,
roots removed

1/2 cup (125ml) stock
-
3 tbsp (45ml) light soy sauce
-
1 tbsp (15ml) dry sherry
-
1 tsp (5ml) sugar
-
1 1/2 tbsp (20ml) cornstarch
blended with 3 tbsp (45ml) water

1/2 lb (225g) soft-fried
noodles (see recipe provided)
Method:

Heat
oil in a wok. Add ginger, garlic, pork and stir-fry
1-2 minutes. Add vegetables. stock, soy sauce,
sherry and sugar. Simmer covered for 2 minutes.

Stir
in combined cornstarch and water to thicken. Serve
over hot noodles.
Note : Deep-fry chow Mein, noodles, drain well and store
in an air-tight container.
