Noodles Recipes - Beef and Vegetables with Noodles (Lo Mein)

Ingredients

  • 8 oz (225g) rump steak, cut across the grain into thin strips

  • 4 tbsp oyster sauce

  • 1/2 cup (125ml) sesame oil

  • 12 oz (350g) egg noodles or spaghetti

  • 4 dried mushrooms, soaked in cold water for 30 minutes, drained and sliced

  • 1/2 cup (125ml) finely chopped bamboo shoots

  • 1 1/3 cups (225g) Chinese cabbage

  • 1 cup bean sprouts

  • 1 tsp soft brown sugar

  • 2 tbsp soy sauce

  • 2 spring onions, chopped

  • 1/2 cup (125ml) beef stock


Method:

  1. Put the meat strips into a shallow bowl. Pour over 3 tablespoons of the oyster sauce and 1 tablespoon of sesame oil and toss to coat them thoroughly. Set aside to marinate at room temperature for 30 minutes.

  2. Meanwhile, cook the noodles or spaghetti in boiling, salted water until they are just tender. Drain and keep hot.

  3. Heat the remaining oil in a large, deep frying-pan. When it is warm but not hot, add the beef strips and stir-fry for 2 minutes, taking care to keep the strips separate.

  4. Push the strips to the side of the pan and add the vegetables. Fry for 1 minute, stirring constantly. Add the sugar, soy sauce and remaining oyster sauce and fry for a further 30 seconds, stirring constantly. Stir the beef strips back into the vegetables, the spring onions and noodles or spaghetti. Pour over the stock and bring to the boil, stirring constantly.

  5. Stir-fry for 2 minutes. Transfer the mixture to a warmed serving bowl and serve at once.
