Noodles Recipes - Combination Seafood Chow Mien

Ingredients

  • 1/2 lb (225g) crisp-fried fresh egg noodles (see recipe)

  • 1/4 lb (110g) shrimp meat, deveined

  • 1/4 lb (110g) scallops

  • 1/4 lb (110g) prepared squid

  • 1/4 lb (110g) sliced fish fillets

  • 1/2 tsp (2.5ml) chopped fresh ginger

  • 3 tbsp (45ml) cornstarch

  • 3 tbsp (345ml) light soy sauce

  • 3 tbsp (45ml) sherry

  • 5 tbsp (75ml) oil

  • 1/2 tsp (2.5ml) salt

  • 4 stalks Chinese cabbage, cut in 1 inch (2.5cm) pieces

  • 1 cup (250ml) sliced bamboo shoots

  • 6 oz (180g) straw mushrooms, sliced lengthwise


Method:

  1. Arrange crisp-fried fresh egg noodles on serving platter and keep warm.

  2. Combine seafood, ginger, cornstarch, soy sauce and sherry, toss to coat.

  3. Heat 3 tbsp (45ml) oil. Add seafood and sir-fry 2-3 minutes. Remove from pan.

  4. Heat remaining oil. Add salt and Chinese cabbage stalks, and stir-fry 1 minute.

  5. Add cabbage leaves, bamboo shoots and mushrooms. Cover and cook 2 minutes.

  6. Return seafood to reheat. Serve over crisp noodles.
