Noodles Recipes - Fried Noodles With Chicken And Vegetables

Ingredients

  • 1/2 lb (225g) fresh egg noodles

  • oil, for deep-frying

  • 1 whole chicken breast, skinned and boned

  • 1/2 lb (225g) uncooked shrimp, peeled

  • 6 Chinese mushrooms, soaked in warm water 20 minutes and sliced

  • 1/4 lb (110g) vegetables (e.g. celery, green onions, beans), cut into matchsticks

  • 1/2 cup (125ml) stock

  • 1/2 tsp (2.5ml) cornstarch

  • 1 tbsp (15ml) soy sauce

  • pinch five-spice powder   


Method:

  1. Divide noodles into four portions. Deep-fry each portion in hot oil until golden brown. drain on paper towels.

  2. Cut chicken meat into strips. Heat wok, add 1 tbsp (15ml) vegetable oil and stir-fry chicken and shrimp with garlic. Add bamboo shoot, mushrooms and vegetables and stir-fry fro a further 5 minutes.

  3. Pour in stock, cornstarch dissolved in soy sauce and five-spice powder and simmer for 5 minutes.

  4. TO SERVE : Place noodles on a plate and spoon chicken and vegetables on top.
