Noodles Recipes - Noodles In Sauce or Gravy (Hui Mein)

Ingredients

  • 1 lb (1.5kg) egg noodles or spaghetti

  • 1 1/3 cups (225g) chopped green beans

  • 3 1/2 tbsp vegetable oil

  • 1 large onion, thinly sliced

  • 1 garlic clove, crushed

  • 1 inch piece of fresh green ginger, peeled and chopped

  • 1/2 cup (125g) finely shredded chicken meat

  • 3 tbsp soy sauce

  • 1 tsp sugar

  • 1 tbsp rice wine or dry sherry

  • 2 cups (450ml) chicken stock

  • 2 tsp butter

  • 1/2 chicken bouillon (stock) cube, crumbled

  • 1 tbsp cornstarch, mixed to a paste with 4 tbsp chicken stock


Method:

  1. Cook the noodles or spaghetti in boiling, salted water until they are just tender. drain and keep hot. Cook the beans in boiling, salted water for 5 minute. Drain and keep hot.

  2. Heat the oil in a large frying-pan. When it is hot, add the onion, garlic and ginger. fry for 1 1/2 minutes, stirring constantly. Add the chicken, beans 2 tablespoons for soy sauce, the sugar and wine or sherry. Increase the heat to high and stir-fry for 2 minutes. Remove from the heat and keep hot.

  3. Put the stock into a saucepan and bring to the boil. Add the butter, stock cube and the remaining soy sauce and stir well. Add the cornstarch mixture and cook, stirring constantly, until the sauce thickens and becomes translucent. Add the noodles or spaghetti to the saucepan and cook for 2 to 3 minutes, or until they are heated through.

  4. Divide the noodle mixture between four serving bowls. Keep hot.

  5. Return the frying-pan to moderate heat and stir-fry for 1 minute to reheat the bean and chicken mixture. Spoon the mixture over the noodle mixture and serve at once.
