Noodles Recipes - Three Jeweled Chicken In Noodle Baskets

Ingredients

  • vermicelli noodle baskets (see below)

Filling

  • 1/2 lb (225g) boneless chicken breast, thinly sliced

  • 1 tsp (5ml) cornstarch

  • 2 tsp (10ml) egg white

  • 3 tbsp (45ml) vegetable oil

  • 2 tbsp (30ml) ginger in syrup, sliced

  • 4 oz (110g) canned lychees

  • 4 oz (110g) canned loquats

SAUCE

  • 1 tbsp (15ml) cornstarch

  • 3 tbsp (45ml) light soy sauce

  • 3 tbsp (45ml) white vinegar

  • 3 tbsp (45ml) sugar

  • 1/2 cup (125ml) lychee juice


Method:

  1. combine chicken, cornstarch and egg white in a bowl. Heat oil in a wok. Stir-fry chicken until white. Add ginger, lychees and loquats.

  2. Combine sauce ingredients. stir into chicken and heat until thickened.

  3. Serve mixture in noodle baskets.
