Baskets
Ingredients
Filling
-
1/2 lb (225g) boneless chicken
breast, thinly sliced
-
1 tsp (5ml) cornstarch
-
2 tsp (10ml) egg white
-
3 tbsp (45ml) vegetable oil
-
2 tbsp (30ml) ginger in syrup,
sliced
-
4 oz (110g) canned lychees
-
4 oz (110g) canned loquats
SAUCE
-
1 tbsp (15ml) cornstarch
-
3 tbsp (45ml) light soy sauce
-
3 tbsp (45ml) white vinegar
-
3 tbsp (45ml) sugar
-
1/2 cup (125ml) lychee juice
Method:
-
combine chicken, cornstarch and egg white in a bowl.
Heat oil in a wok. Stir-fry chicken until white. Add
ginger, lychees and loquats.
-
Combine sauce ingredients. stir into chicken and
heat until thickened.
-
Serve mixture in noodle baskets.
