Chinese Rice Recipes - 'Eight Jewel' Rice (Bark Bow Fan) Recipe

Ingredients

  • 1 tablespoon peanut oil

  • 3 dessertspoons chopped spring onion

  • 2 tablespoons diced cooked lean pork

  • 1 tablespoon diced cooked chicken

  • 2 tablespoons shelled cooked prawns

  • 6 oz. cooked rice

  • 1 raw egg

  • 1 tablespoon cooked peas

  • pinch each salt and Ve-Tsin (M.S.G.)

  • 1 teaspoon soy sauce


Method:

  1. Make the oil very hot. Fry 2 dessertspoons of onion in it for 1/4 minute, tossing it about. Add the meats and prawns and give them 1 minute. Add the rice and heat through for 2-3 minutes, moving it about to break down any lumps.

  2. Break in the egg and mix it in thoroughly but lightly (the rice must not be made mushy) for 1/2-1 minute. Add the peas, seasonings and soy sauce and heat through, stirring to mix well.

  3. Finally, add the remaining finely chopped spring onion. Turn into a heated dish and serve.
