Make the oil very
hot. Fry 2 dessertspoons of onion in it for 1/4
minute, tossing it about. Add the meats and prawns
and give them 1 minute. Add the rice and heat
through for 2-3 minutes, moving it about to break
down any lumps.
Break in the egg
and mix it in thoroughly but lightly (the rice must
not be made mushy) for 1/2-1 minute. Add the peas,
seasonings and soy sauce and heat through, stirring
to mix well.
Finally, add the
remaining finely chopped spring onion. Turn into a
heated dish and serve.
