Recipes - Fried Rice with Egg Recipe
Ingredients

1 dessertspoon peanut oil
-
4-6 oz. cold boiled rice
-
pinch each salt and Ve-Tsin
(M.S.G.)

1/2 teaspoon soy sauce
-
2 chopped spring onions
-
1 beaten egg
-
2 tablespoons cooked peas
Method:

Heat the oil in
the frying-pan. Add the rice and, with the back of a
large spoon or ladle, break up any lumps to separate
the grains and coat them with the oil.

Stir in the
seasonings and soy sauce. Add the onions and cook
them for 1 minute. Pour in the egg and break it up
into small segments as it cooks. Add the peas and
cook further just long enough to heat them through.

Transfer to a
heated dish and serve. The accompanying sauces are
plum, mustard and the boiling hot soup in a tureen.
