Chinese Noodles
Recipes - Fried Soft Noodles (Jing Chow Mein) Recipe
Ingredients

1 recipe noodle dough

1 tablespoon peanut oil

1 slice onion

1 pint (u.s. 5/8 cup) chicken
stock

good pinch each salt, sugar
and (M.S.G.)

1/2 teaspoon soy sauce

1 teaspoon corn-flour
-
1 dessertspoon cold water

2 onion
'flowers'
Method:

Boil the noodles
for 10 minutes then drain them well. Heat the oil
and toss the onion in it for 1/2 minute.

Add the drained
cooked noodles and turn them over and over to coat
them with the oil. Add the stock, seasonings and soy
sauce and cook for 4-5 minutes.

Blend the
corn-flour with the water and stir it in, adding a
little extra stock, if necessary. Boil for 1 1/2
minutes. Turn all into a heated serving dish and
garnish. with the onion 'flowers'.
Note: You may be able to buy fresh egg noodles. In
this case, proceed as above. If you buy packaged egg
noodles, they will require a little longer cooking.
