Chinese Noodles Recipes - Noodles Dough Recipe

Ingredients

  • 1 lb plain hard flour

  • good pinch salt

  • 4 eggs

  • cold water


Method:

  1. Sift the flour and salt on to a pastry board. Make a depression in the centre and drop in the eggs and a little cold water.

  2. Gradually work the mixture together with the handle of a wooden spoon to form a very stiff dough. Gather it into a ball.

  3. To prevent it sticking, dust the board with flour or corn-flour and knead the dough very well with the heels of the hands until firm but pliable and close textured and dry rather than moist.

  4. Roll out the dough in a long sheet, less than 1 inch thick. Fold over and over and cut into thin strips about 1/8 inch in width.

  5. The length of the noodles depends on the space you have in which to roll out the dough in the first place.

Note: Hard flour, which contains a generous proportion of gluten, is the flour used for bread. An 'all-purpose' flour is also suitable but a light cake flour is not. This is the basic recipe for noodles. The number of servings depends on the dish in which the noodles are used.
