Chinese Noodles

Ingredients
2 oz long life noodles
peanut oil
1 oz. raw pig's liver
1 oz. raw pig's heart
1 Pacific prawn
3-4 small heart of lettuce
leaves
1-2 Chinese mushrooms
1 crushed clove garlic
1 teaspoon ginger sherry
1 pint (U.S. t cup) chicken
stock
pinch each salt, sugar and
(M.S.G.)
1/2 teaspoon soy sauce
1 teaspoon corn-flour
1 tablespoon cold water
Method:
Drop the noodles
into boiling water and cook for 4-5 minutes. Drain
well. Sprinkle with a few drops of oil to keep them
separate.
Cut the meats into thin slices and the
prawn into slightly thicker ones.
Break the lettuce
leaves into suitable pieces and slice the mushrooms.
Place them in another dish. Heat 1 tablespoon oil in
a frying-pan. Cook the garlic in it until golden and
then discard it.
Add the meats and
prawn and fry for 3-4 minutes. Add the sherry and
stock and cook for 1 minute. Add the lettuce,
mushrooms, seasonings and soy sauce.
Boil rapidly,
stirring together. Finally, blend the corn-flour with
the water, stir it in and cook for 1 1/2 minutes, still
stirring. Turn into a heated dish and serve.
