Chinese Rice Recipes - Soupy Rice with Sole Recipe

Ingredients

  • 2 tablespoons round rice, well washed

  • 1 piece dried tangerine peel (1 inch in diameter)

  • 1 slice fresh ginger

  • 2 pints (U.S. 5 cups) boiling water

  • peanut oil

  • fillets 1 small sole

  • 1 teaspoon corn-flour

  • pinch each salt and Ve-Tsin (M.S.G.)

  • 1 dessertspoon beaten egg

  • 1/2 teaspoon ginger sherry

  • 1 oz. rice noodles


Method:

  1. Turn rice into 3-pint saucepan. Add peel, ginger, water and 2 teaspoons peanut oil. Cook gently for 3 hours, stirring occasionally.

  2. Cut sole diagonally into thin slices. Place in bowl with corn-flour, seasonings, beaten egg and sherry; work the mixture into them.

  3. When cooked, remove peel and ginger from rice add sole; cook for 2 minutes. Put noodles into hot deep oil for 1/2 minute, keeping them submerged with a shallow ladle.

  4. Divide the 'soupy' rice into 2-3 bowls. Sprinkle the lightly crushed rice noodles over soup and serve.
