Chinese Rice
Recipes - Soupy Rice with Sole Recipe
Ingredients
-
2 tablespoons round rice,
well washed
-
1 piece dried tangerine
peel (1 inch in diameter)

1 slice fresh ginger
-
2 pints (U.S. 5 cups)
boiling water
-
peanut oil
-
fillets 1 small sole
-
1 teaspoon corn-flour
-
pinch each salt and Ve-Tsin
(M.S.G.)

1 dessertspoon beaten egg
-
1/2 teaspoon ginger sherry
-
1 oz. rice noodles
Method:
-
Turn rice into
3-pint saucepan. Add peel, ginger, water and 2
teaspoons peanut oil. Cook gently for 3 hours,
stirring occasionally.

Cut sole
diagonally into thin slices. Place in bowl with
corn-flour, seasonings, beaten egg and sherry; work
the mixture into them.

When cooked,
remove peel and ginger from rice add sole; cook for
2 minutes. Put noodles into hot deep oil for 1/2
minute, keeping them submerged with a shallow ladle.

Divide the
'soupy' rice into 2-3 bowls. Sprinkle the lightly
crushed rice noodles over soup and serve.
