Ingredients
8 oz. long-grained rice
2 Chinese dried sausages

Method:
The rice can be
the best Patna or Carolina. Very well wash the rice.
Place it in a bowl and let cold water run into it
until the water is clear. Drain. Wipe the sausages
with a hot damp cloth.
Turn the rice
into a pan and cover it with cold water to a depth
of 1 inch above the rice. Bring to the boil.
Reduce
the heat. When most of the water has evaporated,
place the sausages on top of the rice. Reduce the
heat as low as possible.
Cover the rice
and sausages and steam for 20 minutes. Remove the
sausages. With a very sharp knife, cut them
diagonally into very thin slices to produce longish
ovals.
Trim the rice
into a heated dish. Arrange the slices of sausage on
top and serve at once.
