Rice Recipes - Chinese Fried Rice

Ingredients

  • 1 1/3 cups (225g) long-grain rice, washed, soaked in cold water for 30 minutes and drained

  • salt

  • 1 tbsp peanut oil

  • 2 tsp soy sauce


Method:

  1. Cook the rice in boiling, salted water for 11 minutes, then remove from the heat and drain. Set aside to cool.

  2. Heat the oil in a large frying-pan. When it is hot, add the rice and cook for 1 minute, stirring constantly to coat the rice with the oil. /stir in half the soy sauce and dry, stirring frequently, until the rice is lightly browned. Remove from the heat and stir in the remaining soy sauce. Transfer to a warmed serving dish and serve at once.
