Rice Recipes - Fried Rice With Beef And Almonds

Ingredients

  • 1/2 lb (225g) lean steak, thinly sliced and shredded

  • 1 tbsp (15ml) soy sauce

  • 1 tbsp (15ml) cornstarch

  • 3 tbsp (45ml) vegetable oil

  • 1 large onion, cut in fine shreds

  • 1 medium green pepper, cut in fine shreds

  • 1/2 tsp (2.5ml) salt

  • 2 cups (500ml) hot steamed rice

  • 4 oz (110g) almonds, toasted

GARNISH

  • green onion shreds

  • extra toasted almonds


Method:

  1. Combine steak, soy sauce and cornstarch. Heat oil in a wok and add steak mixture. Stir-fry 2 minutes. Add onion, green pepper and salt. Stir-fry 1 minute. Add rice and almonds, stir-frying to blend ingredients. This can be done off the heat.

  2. Place mixture into an oiled ring mold. Press down firmly. Turn out onto round serving plate, garnish and serve.

NOTE : When cooking rice for fried rice, steam in advance. Spread onto a tray and refrigerate until required. Cooked rice will freeze and defrost well. (Or put in a tray and separate cooked grains of rice by using chopsticks, let stand until cool).
