Rice Recipes- Fried Rice

Ingredients

  • 2 cups (500ml) cold cooked rice

  • 3 eggs, beaten lightly

  • 1 tbsp (15ml) light soy sauce

  • 1/4 tsp (1ml) sesame oil

  • salt and pepper

  • 3 tbsp (45ml) vegetable oil

  • 1/4 lb (110g) cooked shrimp meat, cut in 1/4 inch (0.5cm) dice (optional)

  • 2 slices cooked bacon, drained, cut in 1/4 inch (0.5cm) dice or 1/4 lb (110g) char sui

  • 2 green onions, chopped


Method:

  1. Use chopsticks or a fork to separate the rice grains.

  2. In a small bowl, combine the eggs, soy sauce, sesame oil and salt and pepper. Set aside.

  3. Heat wok. Add oil by pouring it around the rim. This seals the wok and heats the oil quickly. Add shrimp, if using, bacon and green onion. Immediately add rice and stir-fry over high heat; after a few minutes the grains will separate.

  4. While stirring rice, pour in egg mixture. Stir-fry 1 minute. Serve rice in a warm Chinese bowl to retain heat during serving.
