Poultry Recipes - Five Spice Chicken
Ingredients

3 lb (1.5kg) chicken

4 green onions, shredded
MARINADE

1 tsp (5ml) chopped garlic

1/4 cup (60ml) soy sauce

3 tbsp (45ml) vegetable oil

1/2 tsp (2.5ml) five-spice
powder

1/2 tsp (2.5ml) sugar
Method:

Combine marinade ingredients. Brush mixture inside
and over chicken. Let stand 30 minutes on a rack
over a pan of water.

Drain chicken and roast Chinese style (see roasting
page) at 350F (180C) until tender. Baste and turn
chicken four times during cooking for even browning.

Chop
chicken in pieces. Serve hot garnished with green
onions.
QUICK
VARIATION: Place drained chicken in a glass dish on a
microwave roasting rack. Cook uncovered 27 minutes on
HIGH (100%), turning and basting every 10 minutes.
