Poultry Recipes - Roast Duck And Plum Sauce

Ingredients

  • 4 1/2 - 5 1/2 lb (2-2.5kg) duck

  • 1 tbsp (15ml) vegetable oil

  • 1/4 cup (60ml) plum sauce

MARINADE

  • 1/4 cup (60ml) chicken stock

  • 1 tbsp (15ml) brown sugar

  • 3 tbsp (45ml) soy sauce

  • 2 tbsp (30ml) honey

  • 1 tsp (5ml) five-spice powder


Method:

  1. Combine marinade ingredients in a large bowl. Add duck and baste with mixture. Marinate 1 hour. Baste and turn duck every 15 minutes.

  2. Drain duck, reserving marinade. Roast duck Chinese style on a rack over a pan or water (see recipe) at 350F (180C) for 2 hours. basting with marinade very 30 minutes.

  3. Chop duck into serving pieces and arrange on a serving platter. Heat oil in a saucepan, add plum sauce and heat through. Pour over duck.
