Combine marinade ingredients in a large bowl. Add
duck and baste with mixture. Marinate 1 hour. Baste
and turn duck every 15 minutes.
Drain duck, reserving marinade. Roast duck Chinese
style on a rack over a pan or water (see recipe) at
350F (180C) for 2 hours. basting with marinade very
30 minutes.
Chop
duck into serving pieces and arrange on a serving
platter. Heat oil in a saucepan, add plum sauce and
heat through. Pour over duck.
