Poultry Recipes - Chicken With Broccoli And Walnuts

Ingredients

  • 2 large chicken breasts, boned and cut into small cubes

  • 1 tsp salt

  • 1 tsp ground ginger

  • 2 tbsp cornstarch

  • 1 large egg white, lightly beaten

  • 1/3 cup (75ml) peanut oil

  • 4 large broccoli spears, cut into small pieces

  • 2 cups (225g) shelled halved walnuts

  • 1 tsp soft brown sugar

  • 2 tbsp soy sauce

  • 3 tbsp rice wine or dry sherry


Method:

  1. Rub the chicken cubes first with the salt, then the ginger and finally with the cornstarch. Transfer them to a bowl and pour over the beaten egg white. Stir around gently so that all the cubes are coated.

  2. Heat the oil in a large frying-pan. When it is very hot, add the chicken cubes and stir-fry over moderately high heat for 3 minutes. Using a slotted spoon, transfer the cubes t a plate and keep hot.

  3. Add the broccoli pieces and walnuts to the pan and stir-fry for 3 minutes. Return the chicken cubes to the pan and stir-fry for 1 minute, for until they are well blended.

  4. Stir in the sugar, soy sauce and wine or sherry and cook for 1 1/2 minutes. Transfer the mixture to a warmed serving bowl and serve at once.
