Recipes - Quick-Fried Chicken Cubes In White Sauce
Ingredients
4 chicken breasts, boned
1 tsp ground ginger
1 1/2 tsp salt
1 tsp black pepper
1 tbsp cornstarch
1 tbsp butter
2 tbsp vegetable oil
2/3 cup (125g) peeled shrimp
1 small red pepper, pith and
seeds removed and cut into 1/2 inch (1cm) lengths
1/2 cucumber, halved and cut
into 1/2 inch (1cm) lengths
SAUCE
1/3 cup (75ml) chicken stock
1 tbsp butter
1/4 cup (50ml) dry white wine
1 tbsp cornstarch, mixed to a
paste with 4 tbsp water
1/2 cup (125ml) light cream
Method:
Cut
the chicken flesh into small cubes, then rub them
with ginger, salt, pepper and cornstarch. Set aside.
Melt
the butter with the oil in a large frying-pan. Add
the chicken cubes and stir-fry for 30 seconds. Add
the shrimps, pepper and cucumber and stir-fry for 2
minutes. Remove from the heat and set aside.
TO MAKE SAUCE: Bring the stock to the boil in a
small saucepan. Stir in the butter and wine and boil
until the butter has melted. Reduce the heat to low
and stir in the cornstarch mixture. Simmer for 2
minutes, stirring constantly, until the sauce ahs
thickened. Stir in the cream.
Remove from the heat and pour the sauce over the
chicken cubes. Return the frying-pan to moderate
heat and cook the mixture, turning the meat and
vegetables in the sauce, for 2 minutes.
Transfer the mixture to a warmed serving dish and
serve at once.
