Sweet And Sour Sauce
Ingredients
3 tbsp vegetable oil
1 1/2lb (700g) prawns shelled
or large Gulf Shrimp peeled
1/4 tsp cayenne pepper
SAUCE
2 tsp soy sauce
2 tbsp soft brown sugar
2 tbsp vegetable oil
2 tbsp wine vinegar
1/2 tsp ground ginger
salt and pepper to taste
1 1/4 cups (300ml) pineapple
juice
1 large green pepper, pith and
seeds removed and cut into 1/2 inch (1cm) lengths
2 tbsp cornstarch, mixed to a
paste with 6 tbsp water
Method:
Heat
the oil in a large frying-pan. When it is hot, add
the prawns (shrimp) and sprinkle over the cayenne.
Cook for 5 minutes, stirring frequently.
Meanwhile, to make the sauce, put the ingredients,
except the pepper and cornstarch (cornflour)
mixture, into a saucepan and bring to the boil,
stirring constantly. Add the pepper, reduce the heat
to low and cover the pan. Simmer for 3 minutes.
Stir
in the cornstarch mixture. Cook, stirring
constantly, until the sauce thickens and becomes
translucent. Remove from the heat.
Arrange the prawns (shrimp) on a warmed serving dish
and pour over the sauce. Serve at once.
