Recipes - Quick Fried Shrimps With Cashews
Ingredients
1lb (0.5kg) small peeled shrimp
1 tbsp rice wine or sherry
1 egg white, lightly beaten
1 1/2 tbsp cornstarch
salt and pepper
1 tsp ground ginger
1/4 cup (50ml) vegetable oil
1 cup (125g) unsalted cashews
2 inch (5cm) piece of fresh
root ginger, peeled and chopped
3 spring onions, chopped
Method:
Put the shrimps into a shallow dish. Beat half the
wine or sherry, the egg white, 1 tablespoon of
cornstarch, seasoning and ground ginger together
until the mixture forms a smooth batter. Pour over
the shrimps and toss gently to coat them. Set aside
for 30 minutes.
Heat
the oil in a large, deep-frying-pan. When it is hat,
add the cashews and fry, turning occasionally, fry
for 5 minutes. Push them to the side of the pan and
stir in the shrimps. Stir fry for 3 minutes, or
until they are heated through.
Stir
in the remaining ingredients, except the wine or
sherry and cornstarch and stir-fry for a further 2
minutes. Stir in the remaining wine or sherry and
cornstarch and mix the cashews into the other
ingredients. Cook, stirring constantly, until the
sauce thickens and becomes translucent.
Transfer the mixture to a warmed serving dish and
serve at once.
