Seafood Recipes - Shrimps With Eggs And Petits-Pois

Ingredients

  • 5 eggs

  • 1 tsp salt

  • 2 tbsp butter

  • 1 inch (2.5cm) piece of fresh green ginger, peeled and chopped

  • 1 small onion, sliced

  • 4oz (125g) small peeled shrimp

  • 1 cup petits pois

  • 1 tbsp soy sauce

  • 1/2 tsp sugar

  • 2 tbsp vegetable oil 


Method:

  1. Beat the eggs and salt together until they are blended. Set aside.

  2. Melt the butter in a saucepan. Add the ginger and onion and stir-fry for 30 seconds. Add the shrimps, petits pois, soy sauce and sugar and stir-fry for a further 1 1/2 minutes. Remove from the heat and set aside.

  3. Heat the oil in a large frying-pan. When it is hot, pour in the egg mixture. Stir, then leave for a few seconds until the bottom sets. Remove from the heat and add the shrimps and petits pois. Turn, mix and toss the mixture a few times. Return to the heat and cook for 1 minute, stirring occasionally.

  4. Transfer the mixture to a warmed serving dish and serve at once.
