Stir-Fry Shrimps
With Snow Peas (Mange-Tout)
Ingredients
3 tbsp vegetable oil
2 cups (350g) peeled shrimp
1 1/3 cups (225g) snow peas,
cut into 2 inch lengths
1/2 cup (125g) bean sprouts
2 tbsp rice wine or dry sherry
1 tbsp soy sauce
1/2 tsp soft brown sugar
1 tbsp cornstarch, mixed to a
paste with 2 tbsp water
Method:
Heat
the oil in a large frying-pan. When it is hot, add
the shrimps and stir-fry for 2 minutes.
Add
the mange-tout (snow peas) and bean sprouts and
stir-fry for a further 2 minutes. Add all the
remaining ingredients and bring to the boil,
stirring constantly. Cook, stirring constantly,
until the sauce thickens and becomes translucent.
Transfer the mixture to a warmed serving dish and
serve at once.
