Chinese Seafood Recipes - Egg-Coated and Fried Prawns

Ingredients

  • 3 frozen Pacific prawns

  • little pepper

  • pinch salt

  • pinch sugar

  • good pinch Ve-Tsin (M.S.G.)

  • 1 beaten egg

  • 2 tablespoons peanut oil

  • lettuce


Method:

  1. Halve the shelled prawns lengthwise. Remove the black intestinal lines and trim off tails and rough edges.

  2. Mix together the pepper, salt, sugar and Ve-Tsin. Dust the prawns with them and work them well in. Add the egg and mix well.

  3. Heat the oil. Fry the prawns in it for 2 minutes on each side. Arrange the lettuce leaves on a serving dish and place the fried prawns on them.

Note: If it becomes necessary to add a little extra oil ­and it often is because the Chinese cook uses as little of it as possible - add it down the inside of the pan and never over the ingredients.
