Chinese Seafood Recipes - Fried Herrings

Ingredients

  • 3 small herrings

  • good pinch salt

  • good pinch Ve-Tsin (M.S.G.)

  • few shakes pepper

  • 1 dessertspoon self-raising flour

  • 2 tablespoons peanut oil

  • 1 spring onion

  • few dashes soy sauce


Method:

  1. Scrape, de-gut and wash the herrings, leaving the heads and tails on. Add the salt, Ve-Tsin and pepper to the flour and pass the herrings through the mixture.

  2. Heat the ail in a frying-pan. Fry the herrings in it on both sides. While they are cooking, finely chop the onion. Drain the fish on absorbent paper.

  3. Place on a heated serving dish and sprinkle with the onion and soy sauce.
