Scrape, de-gut
and wash the herrings, leaving the heads and tails
on. Add the salt, Ve-Tsin and pepper to the flour
and pass the herrings through the mixture.
Heat the ail in a
frying-pan. Fry the herrings in it on both sides.
While they are cooking, finely chop the onion. Drain
the fish on absorbent paper.
Place on a heated
serving dish and sprinkle with the onion and soy
sauce.
