Chinese Seafood Recipes - Fried Pacific Prawns

Ingredients

  • 1 tablespoon ginger sherry*

  • 1 tablespoon sesame oil

  • 1 dessertspoon red bean curd

  • 1 finely chopped fair-sized clove garlic

  • 2 chopped slices fresh ginger

  • pinch pepper

  • good pinch salt

  • good pinch Ve-Tsin (M.S.G.)

  •  tiny pinch sugar

  • 1 tablespoon beaten egg

  • 8 Pacific prawns

  • 2 tablespoons self-raising flour

  • 2-3 tablespoons peanut oil


Method:

  1. Very well mix together the first 10 ingredients. Put the prawns into the mixture.

  2. Lift the prawns out and sprinkle them with the flour . In a large frying-pan heat the peanut oil till very hot. Add the prawns, one at a time.

  3. Shake and turn them into the oil. Lower the heat a little. When the shells are a bright red, the prawns are sufficiently cooked.

  4. Cut through the back of each prawn and remove the black intestinal lines. Transfer to a heated dish and serve.

Note: Cut 2 oz. fresh ginger into thin strips. Turn them into a bottle and cover with half bottle warm brown sherry. Leave to infuse, strain and use as directed.
