Fried Pacific
Prawns
Ingredients

1 tablespoon ginger sherry*

1 tablespoon sesame oil

1 dessertspoon red bean
curd

1 finely chopped fair-sized
clove garlic
-
2 chopped slices fresh ginger

pinch pepper
-
good pinch salt
-
good pinch Ve-Tsin
(M.S.G.)

tiny pinch sugar
-
1 tablespoon beaten egg
-
8 Pacific prawns
-
2
tablespoons self-raising
flour
-
2-3
tablespoons peanut oil
Method:
-
Very well mix
together the first 10 ingredients. Put the prawns
into the mixture.

Lift the prawns
out and sprinkle them with the flour
. In a
large frying-pan heat the peanut oil till very hot.
Add the prawns, one at a time.

Shake and turn
them into the oil. Lower the heat a little. When the
shells are a bright red, the prawns are sufficiently
cooked.

Cut through the
back of each prawn and remove the black intestinal
lines. Transfer to a heated dish and serve.
Note:
Cut 2 oz. fresh ginger into thin strips. Turn them
into a bottle and cover with half bottle warm brown
sherry. Leave to infuse, strain and use as directed.
