Chinese Seafood Recipes - Prawns with Peas

Ingredients

  • 1 slice fresh ginger

  • 1 clove garlic

  • 2 tablespoons peanut oil

  • 4 oz. shelled cooked prawns

  • 1/4 pint (U.S. 2/3 cup) chicken stock

  • pinch each salt, sugar and V e-Tsin (M.S.G.)

  • 1 teaspoon soy sauce

  • 5-6 oz. cooked peas

  • 1 level teaspoon corn-flour

  • 1 dessertspoon water


Method:

  1. Crush the fresh ginger and crush the clove of garlic. Place the peanut oil in a large frying-pan. Before it becomes really hot, add the crushed ginger and crushed garlic.

  2. Cook until the garlic takes on a pale gold tone then remove it together with the ginger.

  3. Add the cooked prawns, cook for 1/2 minute then add the chicken stock, the salt, sugar, Ve- Tsin, soy sauce and, finally, the peas and the corn-flour blended with the water.

  4.  Cook for 1 1/2 minutes. Turn the mixture into a deep heated dish and serve.
