Crush the fresh
ginger and crush the clove of garlic. Place the
peanut oil in a large frying-pan. Before it becomes
really hot, add the crushed ginger and crushed
garlic.
Cook until the
garlic takes on a pale gold tone then remove it
together with the ginger.
Add the cooked prawns,
cook for 1/2 minute then add the chicken stock, the
salt, sugar, Ve- Tsin, soy sauce and, finally, the
peas and the corn-flour blended with the water.
Cook
for 1 1/2 minutes. Turn the mixture into a deep heated
dish and serve.
