Chinese Seafood Recipes - Steamed Halibut with Vegetables

Ingredients

  • 2 small slices halibut

  • 3 thin slices fresh ginger

  • 1 soaked Chinese mushroom

  • 1 spring onion

  • 2 tablespoons shredded Szechwan cabbage

  • 1 dessertspoon shredded cooked lean pork

  • little pepper

  • pinch each sugar and salt

  • good pinch Ve-Tsin (M.S.G.)

  • 1 teaspoon sesame oil

  • 1 dessertspoon soy sauce

  • 1 teaspoon corn-flour

  • 1 dessertspoon water

  • 1 onion 'flower'


Method:

  1. Place the trimmed halibut ready on a plate. Cut the ginger and mushroom (stem discarded) into thin strips. Cut on the slant the spring onion into 3/4-inch pieces.

  2. Add the cabbage, pork and seasonings, then the oil, soy sauce and corn-flour, blended with the water. Mix well together. Heap on to the halibut slices and steam for 10-15 minutes.

  3. Transfer carefully to a heated serving dish. Remove skin and bones. If necessary, rearrange the vegetables. Garnish with the onion 'flower'.
