Recipes - Steamed Halibut with Vegetables
Ingredients
2 small slices halibut
3 thin slices fresh ginger
1 soaked Chinese mushroom
1 spring onion
2 tablespoons shredded
Szechwan cabbage
1 dessertspoon shredded
cooked lean pork
little pepper
pinch each sugar and salt
good pinch Ve-Tsin
(M.S.G.)
1 teaspoon sesame oil
1 dessertspoon soy sauce
1 teaspoon corn-flour
1 dessertspoon water
1 onion
'flower'
Method:
Place the trimmed
halibut ready on a plate. Cut the ginger and
mushroom (stem discarded) into thin strips. Cut on
the slant the spring onion into 3/4-inch pieces.
Add the cabbage,
pork and seasonings, then the oil, soy sauce and corn-flour, blended with the water. Mix well
together. Heap on to the halibut slices and steam
for 10-15 minutes.
Transfer
carefully to a heated serving dish. Remove skin and
bones. If necessary, rearrange the vegetables.
Garnish with the onion 'flower'.
