Vegetables Recipes - Bamboo Shoot With Mushrooms

Ingredients

  • 2 cups (350g) thinly sliced bamboo shoot

  • 1/4 cup (50ml) peanut oil

  • 10 dried mushrooms, soaked in cold water for 30 minutes, drained and sliced.

  • 2 tbsp rice wine or dry sherry

  • 4 tbsp soy sauce

  • 1 tbsp sugar

  • 1/3 cup (75ml) water

  • 1/2 tbsp cornstarch (corn flour), mixed to a paste with 2 tbsp water


Method:

  1. Heat a large frying-pan over moderate heat for 30 seconds. Add the oil and swirl it around the pan. Add the bamboo shoots and mushrooms and fry for 5 minutes, stirring frequently.

  2. Stir in all the remaining ingredients and bring to the boil, stirring constantly. Cook, stirring constantly, until the sauce thickens and becomes translucent.

  3. Transfer the mixture to a warmed serving dish and serve at once.
