Bamboo Shoot With Mushrooms
Ingredients
2 cups (350g) thinly sliced
bamboo shoot
1/4 cup (50ml) peanut oil
10 dried mushrooms, soaked in
cold water for 30 minutes, drained and sliced.
2 tbsp rice wine or dry sherry
4 tbsp soy sauce
1 tbsp sugar
1/3 cup (75ml) water
1/2 tbsp cornstarch (corn
flour), mixed to a paste with 2 tbsp water
Method:
Heat a large frying-pan over moderate heat for 30
seconds. Add the oil and swirl it around the pan.
Add the bamboo shoots and mushrooms and fry for 5
minutes, stirring frequently.
Stir
in all the remaining ingredients and bring to the
boil, stirring constantly. Cook, stirring
constantly, until the sauce thickens and becomes
translucent.
Transfer the mixture to a warmed serving dish and
serve at once.
