Vegetables Recipes - Bean Curd With Spiced Meat And Vegetables

Ingredients

  • 1/4 cup (50ml) peanut oil

  • 1 garlic clove, crushed

  • 3 inch (7 1/2 cm) piece of fresh green ginger, peeled and chopped

  • 4 spring onions, chopped

  • 4 dried mushrooms, soaked in cold water fro 30 minutes, drained and chopped

  • 1 tsp red pepper flakes

  • 2 dried chilis, chopped

  • 6oz (175g) ground beef

  • 2 tbsp soy sauce

  • 1 cup (250ml) chicken stock

  • 3 bean curd cakes, mashed

  • 1 tbsp cornstarch, mixed to a paste with 2 tbsp stock


Method:

  1. Heat the oil in a large saucepan. When it is hot, add the garlic, ginger, spring onions and mushrooms and stir-fry for 3 minutes. Stir in the red pepper flakes and chillis and stir-fry for further 1 minute. Add the ground meat and fry until it loses its pinkness. Pour over the soy sauce and stock and bring to the boil, stirring constantly.

  2. Stir in the bean curd and stir-fry for 3 minutes. Add the cornstarch mixture and cook, stirring constantly, until the sauce thickens.

  3. Transfer the mixture to a armed serving dish and serve at once.
