Vegetables Recipes - Stir-Fried Mixed Vegetables With Egg

Ingredients

  • 3 tbsp peanut oil

  • 2 inch (5cm) piece of fresh green ginger, peeled and chopped

  • 5 spring onions, chopped

  • 1 cup (125g) sliced mushrooms

  • 1/2 cup (125g) bean sprouts

  • salt and pepper to taste

  • 1 1/2 tbsp soy sauce

  • 3 eggs, lightly beaten 


Method:

  1. Heat the oil in a large frying-pan. When it is hot, add the ginger and stir-fry for 1 minute. Add the spring onions and mushrooms and stir-fry for 2 minutes. Stir in the bean sprouts, seasoning and soy sauce and stir-fry for a further 2 minutes.

  2. Pour over the eggs, stir them with a fork and leave for a few seconds to allow the bottom to set. Stir again with the fork and leave until the eggs are creamy

  3. Transfer the mixture to a warmed serving dish and serve at once.
