Vegetables Recipes - Stir-Fried Mixed Vegetables

Ingredients

  • 4 tbsp sesame oil

  • 1 1/2 inch (4cm) piece of fresh green ginger, peeled and chopped

  • 1 large leak, cleaned and cut into 1 inch (2.5cm) lengths

  • 2 large carrots, thinly sliced

  • 1 large red pepper, pith and seeds removed and cut into thin strips

  • 1/2 cucumber, halved lengthways, seeds removed and cut into 1 inch (2.5cm) lengths

  • 4 button mushrooms, sliced


Method:

  1. Heat the oil in a large frying-pan. When it is hot, add the ginger and stir-fry for 2 minutes. Add the leek and carrots and stir-fry for 2 minutes.

  2. Add the remaining ingredients and stir-fry for 3 minutes, or until all the vegetables are just cooked but still crisp.

  3. Serve at once.
