Stir-Fried Spinach
With Water Chestnuts
Ingredients
-
1/4 cup (50ml) vegetable oil
-
1/4 cup (50g) sliced bamboo
shoot
-
4 dried mushrooms, soaked in
cold water for 30 minutes, drained and sliced
-
1/2 cup (125g) water chestnuts,
sliced
-
2 cups (0.5kg) chopped leaf
spinach
-
2 pieces star anise
-
1 tbsp oyster sauce
-
1 tsp sugar
Method:
-
Heat
the oil in a large, deep frying-pan. When it is hot,
add the vegetables, except the spinach, and stir-fry
for 3 minutes.

Add
the spinach and remaining ingredients and stir-fry
for a further 2 minutes.
-
Transfer the mixture to a armed serving dish and
serve at once.
