Vegetables Recipes - Stir-Fried Spinach With Water Chestnuts

Ingredients

  • 1/4 cup (50ml) vegetable oil

  • 1/4 cup (50g) sliced bamboo shoot

  • 4 dried mushrooms, soaked in cold water for 30 minutes, drained and sliced

  • 1/2 cup (125g) water chestnuts, sliced

  • 2 cups (0.5kg) chopped leaf spinach

  • 2 pieces star anise

  • 1 tbsp oyster sauce

  • 1 tsp sugar


Method:

  1. Heat the oil in a large, deep frying-pan. When it is hot, add the vegetables, except the spinach, and stir-fry for 3 minutes.

  2. Add the spinach and remaining ingredients and stir-fry for a further 2 minutes.

  3. Transfer the mixture to a armed serving dish and serve at once.
