Chinese Vegetables Recipes - Cooked Cos Lettuce Recipe

Ingredients

  • 6-8 cos lettuce leaves

  • 1/4 pint (U.S. 5/8 cup) chicken stock

  • peanut oil

  • soy sauce

  • pinch each salt and Ve-Tsin (M.S.G.)


Method:

  1. Pick over and wash the lettuce leaves. Bring the stock, 1 dessertspoon oil, few drops soy sauce, salt and Ve-Tsin to the boil.

  2. Drop the lettuce leaves into the liquid and cook for 1/2-1 minute. Drain immediately. Place on a suitable platter.

  3. Mix together a few drops of soy sauce and peanut oil and spoon them over the lettuce.
