Ingredients
3-4 tablespoons bamboo
shoots
3-4 water chestnuts
2 Chinese mushrooms
1 crushed clove garlic
1 tablespoon peanut oil
3-4 roughly cut pieces of
onion
1/4 pint (U.S. 5/8 cup) hot
chicken stock
pinch each salt, sugar and
Ve-Tsin
(M.S.G.)
1/2 teaspoon soy sauce
1 level teaspoon corn-flour
1 dessertspoon cold water
Method:
Thinly slice the
bamboo shoots. Halve or quarter the chestnuts. Slice
the mushrooms, discarding the stalks.
Fry the garlic in
the oil until golden and then discard it. Fry the
pieces of onion for 1/4 minute. Add the bamboo shoots,
chestnuts and mushrooms and cook for 1/2 minute.
Add the hot
stock, the seasonings and the soy sauce. Bring to
the boil. Blend the corn-flour with the water and
stir it in. Boil for 1 1/2 minutes. Turn into a heated
dish and serve.
